I am an Italian immigrant, homesteader, food as medicine educator, and food justice activist living in Central Vermont. I create food-based healing programs to help individuals and families achieve their health goals. I work with those who need support in healing from chronic conditions such as parasites, digestive issues and auto-immune disorders. I am certified in Sustainable Food Systems through UVM. I draw from thewisdom traditions of European Herbalism, The Mediterranean Diet, Ayurveda, Macrobiotics, Mindful Eating, and Chinese Five Element Theory to offer a comprehensive, universal view of food as medicine. I believe that, in order to heal ourselves and our communities, we must decolonize our diets and tap into our bodies' unique wisdom as a source of well being.
From mindful eating and the enteric nervous system to the gut's microbiome and the importance of tracing the roots of our diets, I will guide you through an exploration of the changing nature of health. You will end the course feeling empowered to take charge of your well-being throughout life's experiences. The more we learn about our internal constitution and how it responds to the external conditions of our lives, the better we can harmonize inner and outer world. Our first source of nourishment is breath and, the more we calm our nerves before we eat, the more we digest our food well, assimilate its nutrients, and feel vital. As we redefine our relationship to choosing, cooking, and savoring foods during these 10 weeks, I will be here to support you with additional information and current research on culinary medicine. I will also help you sort through the onslaught of information that we receive about health and glean what's useful. You will learn simple ways to make the best food choices for you in any given moment and practice breath work that allows you to hear and heed your body's wisdom. I will share delicious recipes and ways to tailor them to a variety of dietary protocols and health needs.
